  • left-overs.

    With plenty of pesto left, as well as the fresh mint and roasted almonds for the making of the pesto, I had to figure out the best way to use them up. And so here are what I came up with…

    Spaghetti with basil-mint-almond pesto.

    Chilled cous cous salad: cous cous, fresh mint, roasted almonds, flax seeds, pickled onions, olive oil, and white balsamic-apple vinegar mixed with plum liquor (this results in a taste of more like a sweet plum vinegar).

    Now I’ve got to figure out what to do with the left over vinegar and liquor.

  • Yummy - being creative with leftovers is a great. Well you can drink the Liquor and the vinegar - a teaspoon in a glass of water - is a natural cleaning of the kidneys.

  • You can cook!  This is very creative with leftovers - I'm always impressed when people can make a good meal out of leftovers.

    @The_Eyes_Of_A_Painter - thnx :)  i rarely cook so i tend to get overexcited in the kitchen when i'm in my creative juice again.  i'm quite happy with the way they turned out.  though i'm they could be better.

    @stepaside_loser - not sure about the look but they tasted nice.  even days after :)

    @Fatcat723 - i know.  but was thinking of something a bit more creative.  i could always mix the liquor with soda to make cocktails but the problem is i haven't had any good reason to party.  n as for the sweet apple vinegar, it actually tastes good on its own but i rather use it to flavor salads instead.  i know, i know.  i can't think simple.

    @brooklyn2028 - could use some dried cranberries, though.  it would've been better.  but was too lazy to shop for it.  i just need to make do with what's available in the kitchen.

    @CareyGLY - eerr... how about now?  :)

    @ElusiveWords - the problem is, i rarely cook.  n so when i do, i tend to over do things.  n so i ended up making a big batch that would lasts for days.  it's hard to cook for one.
